Vanilla Cupcakes

Okay, so you’re probably all like- what’s the go with all the recipes Bek? Not in a complaining manner but more surprised as my recipe postage is usually pretty sporadic. Well I’ve been holding onto these recipes for a while now and couldn’t take my excitement much longer! I just had to share them with you. Like my

Now I still feel I could perfect this cupcake recipe a bit more but I think it was more my technique (overbeating ahh) than the ingredients. So make sure you only mix till just combined. These cupcakes were deliciously sweet like usual cupcakes, with a hint of vanilla. They were slightly more dense opposed to fluffy cupcakes (my fault I’m guessing) but that didn’t stop the batch sent it to the bf’s work getting annihilated.

Vanilla Cupcakes
Serves : 12 generous sized cupcakes
Ingredients:
- 2 eggs
- 1/2 cup of Natvia Baking Pack
- 75 g of butter
- 2 tbs of chobani 0% greek yogurt (2% can also be used)
- 2 cups of self raising flour
- 2/3 cup of trim milk (or milk of choice)
- 2 tsp of vanilla extract
Method:
- Cream the butter and Natvia together.
- Beat the eggs lightly in a separate bowl and then add to the butter mixture.
- Add the Chobani also, mix till just combined.
- Add the flour, milk and vanilla to the bowl.
- Mix all together until blended (DO NOT OVER MIX).
- Spoon mixture evenly into a lined cupcake tray.
- Place the tray into a preheated 180 degrees Celsius oven and allow to cook for 17 or so minutes (depending on your oven).
- Remove once cakes bounce back when touched and allow to continue to cook and cool outside of the oven.
- Once completely cooled ice as desired.
I iced my batch with a mixture of vanilla, nutella and cream cheese icing. These would also be perfect with festive cupcake liners and decorated as reindeers, or as other Christmas-y delights! Great to take to a Christmas party or for Christmas Day.
