Welcome to the start of the week! Hope yours started off as great as mine. It kicked off with a early morning Body Step (my last week filling it- welcome back monday morning sleep ins), and a more appropriately time-scheduled bike and body pump class! I’ve also been a busy housewife doing loads of washing, hanging clothes, cleaning, washing up and folding clothes.
Since, I never got the chance to recapture my Sunday I thought I’d do it now. Like today, my Sunday started off in a great way- with a delicious breakfast! I got my chef hat on (the chef hat refused to stay later that night and was happy to stay with its’ new owner- the bf) and made the bf egg in a basket. We saw this on the movie we have been watching- V for Vendetta and knew immediately we wanted to try it out. Check out my technique:
1. I started by cutting a circle out of the bread using a wine glass. This is about the most action my wine glass gets.
3. Now for the fun stuff- crack an egg in the middle and let cook. Once cooked enough, turn over for only a short amount of time, or till desired.
4. Take a better picture next time you document it and serve up ;)
The bf was very happy with his breakfast. I wasn’t feeling eggs so I went the pancake route. I ventured on over to one of my favourite blogs- Peanut Butter Fingers, and tried Julie’s recipe for Greek Yogurt Protein Pancakes (thanks to my new found obsession/find- Chobani!). Into a bowl went one tub of strawberry 0% greek yogurt, 3/4 cup of wholegrain oats and 2 egg whites. I served the pancakes with banana slices, pb and almond butter mmmm.
I was pretty impressed with the staying power of these bad boys and I wasn’t hungry again till 1:30 for lunch! They don’t seem to bad nutritionally wise either. So this is your cue to make/bookmark this recipe guys!
After we were fed and satisfied we headed off to the grocery store to buy this week’s food. We were not in the mood to waste time so we headed straight home, unpacked/sorted everything and headed out again. We were in a rush because we were pretty excited about speaking to a travel agent. Next year we have decided to visit Europe for a month! How exciting right?! I’ll finally get to update this travel page haha ;) I’ll give you more details as we work it out, but for now we think we are going to do a tour for two weeks and then our own thing for the remaining two weeks. We also have a few places we definitely want to see including- Italy (Rome, Florence, Venice etc), PARIS!, Amsterdam and Prague! If you have any tips/recommendations/warnings I’d love to hear it!
How’s everyone’s daily healthy thoughts and the Healthy Thoughts, Healthy Actions pact going? I know I am definitely seeing improvements in myself!
DAILY HEALTHY THOUGHT: Life is to be lived and not over-thought. If we constantly pre-thought, re-thought and over-thought everything, there’d be no time leftover to actually live!
What’s your daily healthy thought? Do you have any Europe travel tips for me? Tell me about your favourite travel holiday (or your fantasy travel holiday).
