Posts Tagged ‘lunch’

Today has been one of those days where plenty has happened and I’ve had no chance to stop- so that’s why this post will feature photos of all the different events and very little words. For your viewing pleasure..

Started my day off with Body Step Class number 1- in my Lorna Jane get up…and yes I had the ‘shorts’ issue again. Maybe I shouldn’t teach in them? Which is a shame since they’re so cute.

I got my hair done, finally!

However after three hours in a sweaty leather chair, the hair looked awesome- BUT my colour didn’t grab too well on my regrowth so…

I got more colour applied to my regrowth and drove home looking very stylish to get some lunch into me!

Lunch was delicious, of course, and served a la bowl style. Tuna salad with beans, lettuce, carrot, cucumber and sweet chilli sauce.

After lunch it was time to wash my colour out and blow dry it. I’m loving the colour, even though it’s darker than I originally hoped for I think it’s better this way so I can slowly adjust. The hairdresser also didn’t want to re-bleach it as she didn’t want to kill my hair…or for me to end up bald. It’s still definitely lighter than black. I’d say it’s a chocolate brown with my natural orange/red colour shining through at times. I like it!

And the last photo I have so far, is me in gym outfit for Body Step 2! Matching top and skort, thank you Les Mills!

I hope you enjoyed my different type of post today. It’s good to mix things up a bit, no? 😉

Do you ever speak up at the hairdressers when you’re not happy? Or do you just deal with it?

Although I’m not a vegetarian I always enjoy a good vego dish and I’m a big fan of veggie patties. But that doesn’t mean I’ll pass up a delicious, juicy beef burger either. I tried a new to me recipe that I found in a little no-name magazine I picked up at the chemist the other day. The recipe was for quinoa burgers and as soon as I saw them I knew I wanted to make them. And once you see them, you’ll be dying to make them too.

The punch of quinoa and vegetables means it’s full of protein, fibre and plenty of good vitamins and minerals. Plus eat it between a wholegrain roll and you’ve got some great wholegrain power in there too.

Being a dedicated vegie fan I (naturally) loved the flavour of the patties. The bf found them flavourless, so I added some bacon to his burger for some extra ‘flavour’. Yes, he has no idea what he is talking about. But you know that I know food- so take my word for it when I say these babies are good.

Nothing better than a flavoursome, healthy and filling burger to satisfy those hunger cries!

Quinoa Patties

Makes 4 patties.

  • 1/2 cup of corn kernels
  • 1/2 cup of grated carrot
  • 1/2 cup of multigrain bread crumbs
  • 1/2 cup of uncooked quinoa
  • 1 tsp of pepper
  • 1 egg, lightly beaten
  • oil

  1. Prepare uncooked quinoa according to packet instructions. Drain excess water.
  2. Combine cooked quinoa, breadcrumbs, corn, pepper, beaten egg and carrot in a bowl.
  3. Using a food processor process until combined but still chunky. Or if like me you don’t have a food processor use a hand held blender to achieve the same desired result.
  4. Shape into 4 even patties.
  5. Let sit in the fridge for 20 minutes (or like me skip this because you don’t got time for that! hahaha)
  6. Heat a frypan on medium heat, adding oil if necessary and cook patties on each side- preferably only turning once. It can take roughly ten minutes, but I find it best to keep an eye on things just in case.
  7. Serve crumbled in a salad, on a wholegrain bun or as is for a healthy and delicious dinner, lunch or snack.

I hope you enjoy these as much as I did! I’m definitely considering making a big batch up and freezing them instead of buying pre-made veggie patties. Things are always better homemade, and even better when they are conveniently pre-cooked and frozen!

What is your favourite type of pattie?

Daily Healthy Thought: Remember to relax!!!!!

Ps. Incase you shuttered at my terrible use of grammar- ‘because you don’t got time for that’, I was actually channeling a funny set of memes I’ve seen lately. I’ll let you in on the joke..
