Okay I know you’ve probably already been to like 8932089018 different Christmas parties and functions, and brought your usual dish along. I’m sorry that only now have I been able to share the amazing recipe I mentioned the other day– yes it was also Twitter worthy. Because this dish would be the knock-your-socks-off dish you would have taken. It’s really nothing special apart from being healthier, lower calorie, high fibre, delicious, sugar free, delicious, festive and mini! Wait, maybe it is totally special.
I’ve been saying for a while that I’d re-make one of our family favourites and mum’s indulgent recipe but to be honest I was a bit intimidated. I mean hers are good, really good and I didn’t want to end up with a crappy healthy comparison.
What I didn’t expect was for everyone to love them, beg me for a recipe and request that these be made instead of mums! I feel bad to take it away from mum, but I think the fact that we’ll all be making them together is what counts- not whose recipe you use.
Without further ado, dun-dun-dun-dun!
Christmas Chocolate Truffles
- 1 serving of Natvia Condensed Milk
- 1 cup of desiccated unsweetened coconut + extra for rolling
- 1 cup of wholegrain oats, lightly processed/blended
- 1 tbs of unsweetened cocoa powder
- Grab your Vitamix (food processor or blender will also work) and blend oats until coarse (keeping a few thicker pieces in here and there).
- Place oats into a large bowl with coconut, cocoa powder and your Natvia Condensed Milk.
- Mix together until well combined.
- Grab small sections (depending on desired size) of mixture and roll between your palms until balls are formed.
- Lightly dip into another small bowl of coconut and roll to cover the outside.
- Put into a container and keep in the fridge until needed (Can be frozen if desired).
Now you’ve got roughly (depending where you live) 8-9 days of Christmas-ness left, so make these now for snacks around the house, as gifts, for Christmas parties, Christmas catch ups and just for the sake of it. Because like Christmas these babies only come once a year…but I guess with my Natvia magic they could come a little more often hay? Just take the ‘Christmas’ out of the title and you’ve got year-round Chocolate Truffles! Christmas has come early this year folks 😉
