OH no- it’s that time again, the weekend is over red rover. But guess who is taking the day off tomorrow- the bf! And he is taking me somewhere special for lunch, for no other reason than because he wants to 🙂 I really am a lucky girl, but you already knew how spoilt I was didn’t you.
But let’s not get too far ahead of ourselves, first lets talk about today. This morning I ventured into unknown territory and made some almond butter pancakes.
These will need further tinkering but as soon as I had my first bite I knew what it needed-more moisture. I’m thinking next time I might add some trim milk to the batter. The pancake is not an ordinary fluffy pancake but is quite dense (and filling surprisingly). I had one alongside a vegie scramble and gave the bf the other after making him bacon and eggs 🙂 Aren’t I a cute little housewife? I will share the recipe with you but please be aware that these are far from perfect and I will definitely be making adjustments to these for the future- and I’ll continue to fill you in on that journey too.
Almond Butter Pancakes
Makes 2 medium pancakes.
- 1 egg
- 1 tbs of almond butter
- 1/3 cup of almond meal
- 1 tsp of stevia baking powder
- 1 heaped tsp of vanilla protein powder
- Mix all ingredients together in a bowl.
- Pour the batter onto a greased fry pan or non-stick frypan over medium heat.
- Flip when ready according to personal preference.
- Add your favourite toppings.
The vanilla protein powder was a last minute decision and I was very hesitant to add it- since I don’t really like the taste of it all that much, but decided to up the protein stats a bit. And since it worked out pretty good in my vanilla protein slice why not give it a shot. I topped mine with raw honey and crushed walnuts (the bf went the maple syrup route). Whilst they tasted nice and I could only slightly taste the nasty protein powder they were a tad dry and I would next time add some milk to moisten it up. If you decide to make them I would add in a small a bit of milk, check the consistency and increase if needed etc.
After being fueled up for the day the bf and I went grocery shopping and just had a lazy day around home before we went over to his mates (I ended up dropping them out also). Speaking of which- I am sure I’ll be getting the pick up call soon haha. World’s greatest girlfriend? You know it!
