Vacuuming- done, shower- done, lunch-eaten and blogs- read… but let’s go back a bit to the lunch part. I wouldn’t call it a recipe but thought I’d share this ‘idea’ for a delicious lunch because I couldn’t be selfish and keep it all to myself now could I? To make things easier I’ll put it in a typical recipe format so you don’t waste any more time and before you know it you’ll be ooohing and ahhing like me 😉 Warning: The title is a mouthful 😉
Pumpkin, tofu, mushrooms and semi-dried tomato open grill
- pumpkin, thinly sliced
- tofu, thinly sliced
- mushroom slices
- semi-dried tomato pesto
- low fat cheese slice
- bread, toasted
- Steam the pumpkin till soft.
- Meanwhile, pop a slice of bread in the toaster.
- While all that is happening cut thin slices of tofu and pat down with a paper towel.
- Once all is ready, assemble a layer of tofu on your toast followed by a layer of pesto and then the pumpkin slices.
- Pack on your mushroom slices and top with the cheese.
- Pop in the grill for roughly 5-6 minutes or until cheese is melted to your liking.
This was surprisingly good, well not surprisingly since the ingredients are the bomb-diggity. I had mine with a side salad- I just chucked in lettuce, cauliflower (steamed), leftover pumpkin (that wouldn’t fit on the grill), cucumber and carrots. But let’s focus on the open grill. The semi-dried tomato- pumpkin- tofu combo is so good and you really get that pesto flavour coming through. Since tofu is fairly flavourless- it acts as a nice vehicle to the other flavours, gives you a good dose of protein and adds a good texture (if you like spongey like me that is). I tried to take a picture of the layers… but it didn’t work out as good as I hoped. Oh and why mushrooms? More like- why not? If you’ve read my favourite foods page then you know I love mushrooms and will generally add them to every and any-thing.
Oh and I have a weird eating ritual when I have open grills- I always eat the corners first, then I eat all the crust ‘areas’ and leave the middle (the best part) to last. Yup, I am a weirdo; but that last bite always rocks 😉
