Happy Thursday! How is everyone? My calves are definitely improving (thanks to rest, stretching and deep heat!) and I managed to get through my Body Step class this morning. I have another one tonight and I’m hoping they will be okay for that one too. I ended up teaching 8 new tracks this morning and was super nervous beforehand. Last minute driving practise did help though 😉 I was also a bit apprehensive with how the members would take the class, since there are a few significant changes in this release. From what I saw though everyone loved it- and they can’t believe how hard it is! I agree entirely. This release is a killer and I can’t wait till my calves and achilles are fully recovered so I can absolutely thrash it out!
The other day I mentioned I had a slice recipe coming your way. What took so long? Well I kept forgetting to take photos and then before I knew it- all the slice was gone! Lucky I got the bf to take a shot of his slice at work. Isn’t he just adorable? Check out his photography skills 😉
Marshmallow Slice
Adapted from Healthy Food Guide Magazine. Makes 24 or so servings.
Ingredients
- 50g reduced fat butter
- 2 cups large marshmallows
- 2 cups rice bubbles
- 100g malt biscuits, crushed
- 1/3 cup of sultanas
Method
- Spray a 30 x 20cm baking tin with oil.
- Place butter and marshmallows in a heatproof bowl and microwave for 30 seconds intervals until melted. Stir regularly and stay watching to make sure it doesn’t over cook.
- Combine dry ingredients (rice bubbles, biscuits & sultanas) in a large bowl.
- Pour melted marshmallow mixture into dry mixture and combine well.
- Pour into tin and spread until even.
- Place in the refrigerator for an hour or until set.
- Slice into 24 pieces.
The original recipe said it makes 32 pieces and I wasn’t able to get that many. If you manage to get 32 pieces the approximate nutritional information they give is:
47 calories, 0.6g of protein, 1.3g of fat, 0.4g of sat fat, 9.1g of carbs, 5.3g of sugar. 0.2g of fibre, 34mg sodium, 2mg of calcium and 0.3mg of iron.
So, if like me you only manage to get 24 pieces your information will slightly increase but not by much. Easy-Peasy!
I really loved the subtle sweetness of this slice, as well as the crunchy texture! This is definitely going to be a regular in this household. It’s not overly rich like my toblerone brownies or triple choc brownies, and could definitely be enjoyed with a cuppa or as a quick snack when you feel like something a bit sweet. I have SO much difficulty living in the present! I always want to move forward into the future, and it DOES make me extremely anxious.
Me too! If you check out my old post on managing anxiety you’ll see a technique that asks you to list 5 things you see, hear and feel, then 4 and so on. This is a really good technique for getting you focused on what is currently happening around you NOW- if you’re ever interested 🙂
